L’Instant T is a unique culinary experience in Toulouse. Winner of the Vanel d’Or 2018, Rajesh CODANDABANY and his team sublimate local produce and simple, high-quality raw materials to serve you refined dishes with unexpected flavours.
The Chef and his team offer a menu that is renewed every three weeks, based on seasonal produce and tastes. The meats, vegetables, fruit and fish of the day are sourced locally, guaranteeing freshness.
The main dining room is meticulously decorated, with a few inspired touches reminiscent of the nearby Cité de l’Espace. With wrap-around lighting and constellations of planetary plates on the wall, L’Instant T sets the tone and invites its customers to come and enjoy a delicious meal.

The story of our young chef is unique and inspiring.
Rajesh’s passion for cooking began in his teens, when he had his first taste of French gastronomy in the tricoloured restaurants of Pondicherry. This culinary love at first sight was a revelation and marked the start of a new adventure. At the age of 15, he left his native country to come to France and start training alongside three-starred chef Yannick Aléno, at Le 1947 in Le Cheval Blanc in Courchevel, then in the pink city at Le Cénacle, awarded a Michelin star?
After acquiring technical skills and experience, this passionate cook sought out new challenges in Toulouse’s gastronomic brasseries. He joined l’Instant T as second chef in 2022 and became Chef 1 year later.
His commitment to the kitchen knows no bounds, and the quest for flavour drives each of his recipes. Infusing, smoking, experimenting: for Rajesh, the aim is to leave a striking and daring taste imprint on every palate. It’s a vision of cuisine that he shares with his brigade, where every member is committed to creation and the culinary experience.
