TOULOUSE
In the heart of the Arnaud Bernard neighbourhood, Mordant puts a delicious, generous new spin on the sandwich, with a genuine focus on quality ingredients. Here, a quick lunch feels just like home-cooked food: the sandwiches are made to order using fresh, local and seasonal ingredients, served on carefully selected spelt-germ bread.Behind Mordant are Cindy and Guillaume, a passionate duo who share a love of good food and home-made specialities. Guillaume Boixo, head chef at the Tête en l’air restaurant, brings his culinary expertise to this welcoming spot, designed to be a genuine neighbourhood sandwich bar.
The concept is simple: high-quality ingredients, prepared on the premises and generously filled. The bread is toasted to create that distinctive contrast between crisp and soft, whilst the recipes change with the seasons and the chef’s inspiration. Whether it’s a César salad, a ‘bagnat’ or even more creative dishes: the menu changes regularly to ensure food lovers never tire of it.
Mordant also gives pride of place to local producers and artisans, sourcing vegetables from regional growers, meat selected from Toulouse-based suppliers, and bread supplied by an artisan bakery. This commitment is reflected right through to the homemade desserts and the selection of craft drinks.
